Sodium hexametaphosphate（SHMP） is an inorganic substance with molecular formula (NaPO3) 6. It is a white powder crystal, or a colorless transparent glass sheet or block solid. Soluble in water, insoluble in organic solvents. It has strong hygroscopicity. When exposed to the air, it can gradually absorb water and form a mucilage. It can form soluble complexes with calcium, magnesium and other metal ions. It is widely used in food and industrial fields.

Sodium hexametaphosphate is a viscous substance after water absorption, which is closely related to the nature of hexametaphosphate itself, the molecular formula of sodium hexametaphosphate belongs to a polyphosphate of variable composition, the anion of sodium hexametaphosphate has a high molecular weight, and generally contains the number of PO3 genes up to 20-100, and forms a long chain.
